Sour wines were most likely produced with unripe grapes and had heightened acidity. Sweet and dry wines were exactly like wines today made with either white or red wine grapes.

Στην Γεωργία του Καυκάσου χρησιμοποιούνται ευρέως μέχρι και σήμερα προτόγονες τεχνικές σε όλα τα στάδια της παραγωγής κρασιού και τελικά το προϊόν δεν είναι διόλου ξινό ούτε και ευκαταφρόνητης ποιότητας. They’d been abused under the Russians and then had further suffered the insults of communism. Through it all they never lost their wine tradition. They clung to their ghvino (wine) with such a passion you’d think it was their blood. They also clung to a clay pot called a qvevri, in which they made their wine with unfailing devotion.
Reading through Henry W. Nevinson’s view of Georgia in his 1920 Peoples of All Nations: Their Life Today and Story of Their Past, I was struck by how little had changed. Nevinson writes the following about Georgia: “The chief product was wine. The country seems to run with wine. The grapes are squeezed in primitive presses, cleaned with boughs of yew, and the juice run off into huge earthenware vats sunk in the ground, and big enough to hold a man, for when fermentation is finished and the wine drawn off a man gets into the vat to clean it out. The wine is usually poured into tanned buffalo skins, which are laid upon narrow wooden cars and driven slowly along the mountain roads, joggling as they go.”
Except for the tanned skins for transport, the process is pretty much exactly as I witnessed in my own travels. What’s more, now, as then, the country seems to run with and on wine. According to historian David Turashvili in his book His Majesty Georgian Wine, customarily Georgians would first ask about their neighbors’ vines and only then ask about their families. Wine is the Georgians’ poetry and their folklore, their religion and their daily bread.
What do these ancient yet new wines taste like?
There is red and white wine, of course, but the region is most famous for its white wine, which is actually the amber color of rattlesnake venom. Some call it orange. The color comes from making a white wine as a red wine, with skin contact (see chapter 1). This skin contact not only darkens the color but also lends a sturdy texture. Many of the Georgian wines are tannic, like the tannin in a cup of green tea. On the palate there can be sensual explosions of blossom water and honey without the sweetness; there can be exotic, church-evocative spices of myrrh and frankincense and often a nut of juiciness in the middle.
The reds are far from stereotypical, ranging from large and powerful to delicate and light. Flavors can call to mind the desert or the mountains. But with so many different varieties of grapes and variations of soils, there’s a spectrum of tastes.
In a traditional winery one won’t find the familiar wooden barrels. Instead the historical and favored vessels for fermentation and storage are the qvevri, the huge earthenware vats sunk in the ground that Nevinson wrote about. They are particular citron-shaped amphoras, made of the local terra-cotta, sealed, sanitized on the inside with propolis, and strengthened with a lime paint or concrete on the outside. They are buried in the ground, where they can survive safely as long as there are no earthquakes, for generations. And now the qvevri have a stamp of approval from the United Nations.

Νομίζω είναι πολύ δύσκολο να ξεπεράσεις το 15% αλκοόλ με ζύμωση. Τουλάχιστον η σημερινή εμπορική μαγιά εκεί έχει ταβάνι, μεγαλύτερη συγκέντρωση αλκοόλ τη σκοτώνει. Αμφιβάλλω αν με τη χημεία που ήξεραν στην αρχαία Ελλάδα έφταναν κάν το 13%.
Οπότε το αραιωμένο κρασί μάλλον ως ανάλογο των σημερινών κοκτέιλ τύπου παντς ή σανγκρία πρέπει να το δει κανείς, λίγο πιο αραιό μάλλον αν συνιστούν 1 προς 3 αναλογία αραίωσης.
Παρεμπιμπτόντως, ο γύψος είναι καλή ιδέα αν έχει ξυδιάσει το κρασί, είναι βάση και εξουδετερώνει το οξύ.
Οπότε το αραιωμένο κρασί μάλλον ως ανάλογο των σημερινών κοκτέιλ τύπου παντς ή σανγκρία πρέπει να το δει κανείς, λίγο πιο αραιό μάλλον αν συνιστούν 1 προς 3 αναλογία αραίωσης.
Παρεμπιμπτόντως, ο γύψος είναι καλή ιδέα αν έχει ξυδιάσει το κρασί, είναι βάση και εξουδετερώνει το οξύ.

Η καλύτερη έκφραση που έχω ακούσει για το κρασί ειπώθηκε απο τον Πλατωνάκο.....
Τί γεύση λέει έχει το κρασί ;;;.....όταν το πίνεις μετά απο γλυκό είναι ξυνό.....όταν το πίνεις μετά απο αλμυρό είναι γλυκό.....άρα.....
Αυτός ήταν τελικά και ο λόγος που άρχισα να πίνω κρασί στα 30+.....γιατί μου το έδιναν να το δοκιμάσω ξεροσφύρι και το έβρισκα στυφό.....
Δε μου έλεγαν οι βλάχοι ότι αμα το πιείς μετά απο τυρί ή από κρέας ψητό θα είναι πολυτέλειο.....

το ανερωτο κρασι ηταν πολυ δυνατο,
για αρρωστιες, πολεμους .........
τα σημερινα κρασια εχουν μπολικο νερο
για να στελνουν στο εμποριο πιο πολλα

Κι εγώ ασχολούμαι με μίξεις αλλά το αλκοόλ είναι εντελώς άχρηστο για τον οργανισμό σου, Λίτσα. Το natural wine (δηλαδή το πρωτόγονο φυσικό κρασί χωρίς μηχανήματα και πρόσθετα που είχαν στην αρχαιότητα και που έχει γίνει μόδα τα τελευταία χρόνια) δεν είναι σε καμία περίπτωση οξειδωμένο. Το οξειδωμένο (oxidized) κρασί (χωρίς γεύση και που αφήνει έντονη πικρή και δυσάρεστη απόγευση) σημαίνει ότι έχουν γίνει λάθη στην παραγωγή. Το oxidative wine (οξειδωτικό) είναι εντελώς διαφορετικό πράγμα και μπορεί να είναι και εξαιρετικό.
MYTH: NATURAL WINES ARE BROWN AND OXIDIZED, AND TASTE LIKE WET SOCKS AND CURRY.
TRUTH: BROWN WINE IS RARE. OXIDIZED IS ALWAYS A FAULT.
People are always confusing oxidized (negative) with oxidative. Oxidized is a flaw, caused by exposing the wine to oxygen during wine making or storing it on a heater or on a hot dock when transferring it to the warehouse. For those oxidized wines, you would use words such as maderized, or cooked, to describe the deadened flavors. But oxidative, that’s a different story (see this page). This is a deliberate wine-making choice.
However, what about the wine’s color? No matter where they begin on the color chart, white wines deepen in color with age (red wines fade). But yet sometimes a young wine is brown, even when it hasn’t prematurely aged.
Take a wine from Milan Nestarec, a producer from the Czech Republic, the 2013 Antika Podfuck (yes, its real name). It was a Pinot Gris. The color was practically caramel. Pinot Gris grapes have pink skin, the wine had some skin contact, it was made in the presence of oxygen, and so you would expect some color. But the wine looked like death. Yet, instead, it was fresh and delicious. Transcendent. Vibrant.

Oxygen has a big impact on wine as it ages—too much during the winemaking process, or after bottling, and the wine can become oxidized—a major flaw. But if the winemaker controls the amount of oxygen, it can be harnessed to impart a special character that wine drinkers throughout the ages have enjoyed. When intentional, the effect is often sublime. We sometimes compare wine oxidation to the process of dry-aging meats … where essentially you are sacrificing a portion of the original product to yield a more complex and fulfilling final product. This is done by stressing the original stock (via oxygen exposure) to provoke its best traits to come forward in its defense.
