Ingredients:
1.5 lbs (680g) pork tenderloin, sliced into 1-inch (2.5 cm) thick medallions
1/4 cup (60ml) olive oil
1/4 cup (60ml) soy sauce
1/4 cup (60ml) balsamic vinegar
2 tbsp honey
2 cloves garlic, minced
1 tsp dried rosemary
1/2 tsp dried thyme
1/2 tsp black pepper
Salt, to taste
1/2 tbsp cornstarch (optional, for thickening sauce)
Instructions:
Prepare the marinade: In a medium bowl, combine olive oil, soy sauce, balsamic vinegar, honey, minced garlic, dried rosemary, dried thyme, and black pepper. Mix well.
Place the pork medallions in a shallow dish or resealable plastic bag. Pour the marinade over the medallions, making sure they're well-coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or ideally up to 8 hours for more flavor.
Preheat your oven to 400°F (200°C).
Remove the pork medallions from the marinade, setting aside the marinade for later use. Pat the medallions dry with paper towels to remove excess marinade, and season with salt to taste.
In a large oven-safe skillet or frying pan, heat 1 tablespoon of olive oil over medium-high heat. Sear the pork medallions for about 2-3 minutes per side until they develop a nice brown crust.
Transfer the skillet with the pork medallions to the preheated oven and cook for 10-12 minutes, or until the internal temperature reaches 145°F (63°C). Use a meat thermometer for accuracy.
While the pork medallions are in the oven, pour the reserved marinade into a small saucepan. Bring it to a boil, then reduce the heat and simmer for about 5 minutes to thicken the sauce slightly. If desired, you can mix the cornstarch with 1 tablespoon of water and add it to the sauce to thicken it further.
Once the pork medallions are cooked, remove the skillet from the oven and let them rest for a few minutes. Drizzle the cooked medallions with the thickened sauce.
Serve the marinated pork medallions with your favorite side dishes, such as roasted vegetables, mashed potatoes, or a fresh salad.
